Blog, posting and portals

Is there a way to have a portal to have other people in my company (editors, bloggers, etc.) to log in and just be able to post blogs (video or written) and choose tags while I, myself admin and editing the site, is the sole user to have admin access?

I'm just starting my site so my knowledge of Concrete5 (With Fruitful theme) is barely in it's infancy and took me 8 hours just to figure out very simple things.

How do you actually build a blog and upload it? From what I'm seeing, you have to actually create a page for each blog instead of it just being on the main blog page? Again, I'm just starting and have no knowledge of any of this.
