I'd like to shift to another CMS's provider by re-writing my website from scratch.
Could you kindly advise on how to uninstall my website which I built by Concrete5 and how to release my domain name?

You need to use your host control panel. Delete all the concrete5 files. Delete the database used by concrete5.

You might also need to undo and changes made to .htaccess and/or robots.txt.
