Create Theme Based on Existing Site and Add Video Chat Consulting Service

My website ishttp://3rsustainability.com. I'm looking for three things:
1. Create a theme based on existing site design so that I can manage and update the site using concrete5 on my own.
2. Add the ability to charge users of the website money to access live video chat consulting service. I'm looking to use something like Katana or Jitsi (ideally Jitsi since open source) so that my coworkers can provide live video chat consulting service to website visitors. I want to be able to charge for the service (possibly use paypal, stripe, etc.).
3. Let me know if you are available for ongoing support on an hourly basis for potential problems. If so, what is your rate and general availability (i.e. do you have a referral for someone else if you are busy).
