Bootswatch

I have a 5.6 website built with the Bootstrap 3 theme from HostCo. I'd like to rebuild the site in 5.7, but HostCo hasn't updated their products for 5.7. How can I build my simple site (screenshot attached) in 5.7?

You will need to port it over yourself. There isn't a lot involved but there is some work to be done, I assume that this is a theme which is part of a package. You will want to read some of the documentation that exists about this topic but it shouldn't be too difficult to get it 5.7 ready if it truely is a simple site http://documentation.concrete5.org/developers/designing-for-concret...

Elemental (and cloneamental) are bootstrap3, so for a starting point you could take cloneamental and edit in the relevant css (or less) from bootswatch.

Be aware that Bootswatch is copyright to hostco, so even if you are just copy/pasting css from it you should either have their permission or have a license for the site (even if you cant install it!)
