Default site theme

After adding a new custom theme (package) I have installed, inspected and activated, however the new theme has not been assigned to all pages. Did I miss a step?

Is it possible that you had manually assigned a theme previously to the pages that are not displaying your new theme? You may have to edit the design properties for the pages not showing the new theme.

There must be a way to globally reset page themes to the default without touching each page (db update perhaps?). There are hundreds of pages in my site.

It may also be that your new theme doesn't have page types corresponding to the page types in use in the earlier theme.

If you have a blog section using a blog page type, and your new theme doesn't have a blog page type, then the new theme won't be applied to your blog section.

Clear your site cache. That may do the trick.
