Plain Yogurt Header, Nav Bar, and Error Message

Although I've worked with Dreameaver and HTML in the past, I have to admit that what should be simple has got me flustered. I'm using Plain Yogurt, which seems to work well with just a couple of gliches:

1. The name of my site is automatically added to my header. However, I've changed the name of site from when I initially set it up through system maintenance. This worked with the exception of the header. When I try to edit it through the header, I can only edit the navigation bar. Is there a way to actually edit the page title in the header using this theme?

2. Speaking of the navigation bar, is there a way I can edit the page titles (for example, I'd like to change the word "Blog" to "Grants." Alternatively, how would I create a new page but retain the navigation bar?

3.Finally, I received a message that an update is available; however when I go to download it, I get this message: The directory /kunden/homepages/32/d442312661/htdocs/app442312679/updates must be writable by the web server. I'm using 1and1 as my host server and downloaded Concrete5 through it. Does anyone recognize this??

I have not published it, though, as the ISD 197 Foundation website still exists. I don't want to publish this until I get it completed. Then I'll remove the other site.
