Blog pages - page Attributes & Content not updating in Composer

I'm putting together a site using localisation and custom themes, and while testing the blog template as I develop it, I realised that the Attributes & Content fields (Header, Thumbnail, and Blog Content) available in Composer will not update at all.
I've tried resetting to the default theme to see if this makes an difference but it still behaves exactly the same way - no matter what content I put in these fields, as soon as I click save or publish, the fields are empty.
The only hint of a problem I can see is the following message in Chrome's console:
I'm using 5.6.3.2 - has anyone had this problem and fixed it?

I'm using 5.6.3.2 - has anyone had this problem and fixed it?
Whenever I try to add a Content block, it throws the error - plus I can't actually add anything to the modal window that is opened.
However, adding an HTML block seems to work fine.
