Version 1.3.0 should have the ability to hide it completely. You can find it under the same page as I mentioned above. It should be the
App hidden in header
Field that you need to set to "Hidden", to completely remove it from being generated in the HTML.

And enable/disable the "App version displayed in header" field. This will output content="concrete5 - 8.1.0" when enabled, and content="concrete5" when disabled. You can not fully remove this meta tag right now. You want to have it fully removed or...?
