Page Type Templates

In the old concrete5 I could go into page types and set them up as templates so that I could add a block to every page of that type or just set it up to be a template with custom blocks on that page type.
Does this function exist in 5.7? If so I am having a hard time finding it.

I believe you are looking for Edit Defaults.
Dashboard > Pages & Themes > Page Types > Output button > Edit Defaults

If a page type uses multiple page templates, then each page template can have defaults set. Also, when setting page template defaults, there is an additional Composer Control block available. Composer Control allows for displaying blocks that are set in the Composer form such as the Content block.
