I am thinking of creating an Email Auto-responder addon. I thought there was already an addon that did this, but I may be wrong.

It would connect to your email account on your server (ex. mail.youremail@yourdomain.com), and you can add as many emails as you want to have auto-responder to.

You would be able to create a custom auto-reply email (using the WYSIWYG editor), and it would track how many emails were sent and to what email addresses.

What do you think? Is this something you would be interested in?
