All of these can be simply removed when you create your own theme.
Just don't include them.

to remove/customize Concrete5 Site "header" i went to Global Scrapbook and then edit it. Done.

Yes, that's another way to remove the site name. But since you asked to remove many things, the answer I gave achieves that.

How do I edit the Global scrapbook? I tried but must not have done it right...

I changed content/text of My_Site_Name in the Global Scrapbook from concrete5 Site to something else. That change is reflected correctly now in the Global Scrapbook, but nothing has changed on the web page.
