Advice please - setting up page lists - new to 5.7

Hi, I'm still very new to 5.7 and would really appreciate some help!
I'm trying to build a site for a small festival which will run from Friday to Sunday, and I would like to build a 'Programme' page listing all the events running on the different days. There aren't that many.
I want (I think?!) 3 separate Page List blocks titled 'Friday' 'Saturday' and 'Sunday' which will pull in a set of thumbnail-style links to subpages that are somehow tagged Fri/Sat/Sun.
I've been playing around with the demo site/preinstalled content and I want to achieve something like the Portfolio page where there are portfolio pages underneath. But it all seems a bit complicated.
What is the absolutely simplest way to label each of my 'event' subpages by day, just so that I can filter events and get, say, 'everything happening on Saturday'? Do I need to make some kind of 'day' attribute and if so how do I go about it? The topic trees in the demo site look a bit OTT for what I'm aiming for.
