Is there a way to override package files in v7+?

Esp. those ones in the /src folder of a package and how?

I am just looking for a general guideline to do it or to at least find out if it is possible or not, because this topic is not being covered in the official documentation.
I know in v5.6 things were a lot straightforward. You just need to copy whatever file from a package folder and paste it into the corresponding root folder, then you can basically override anything you want. However, I found it particularly hard to do this kind of things in v5.7+, no need to mention the lack of documentation on this topic on Concrete5.org.
