Does 5.6.3.x work with php 5.6?

That way I can hopefully run a 5.6.3.x installation and 5.7 + 5.8 installations on the same server...

With php 5.6, you should be able to run concrete5 version 5.6.x and upwards. I don't think 5.5 will run though (but you don't need that I assume). The rest should just work fine. You can see the version requirements for 5.7 and 8.x over here:

Be aware that concrete5 version 5.6.x does not run on PHP7. So do not use that version of PHP if you want to run all these concrete5 versions.
