When a guest register can they select a user group? How?
A guest can't but you can choose which group they're assigned to using the 'Registrant Group' addon (free). On a side-note guests are put into the 'Registered Users' group by default unless you change that.
On some sites I've added a 'Requested Status' list that allows the registrant to request that they be added to certain groups (see attached). It doesn't add the new user to these groups automatically but it gives the administrator some idea of who is registering so they know how to follow-up with them.

The way I built mine was to open the full dashboard and in the "Members" section, click "Attributes". Here you can add questions that new registrants can (or must) answer. One feature of this is that if you add new questions after some members have already registered, the next time those original members sign in, they are presented with your new questions. Very nice.
