Default and option in a dropdown selection

Feature Request.
Currently it appears that when you create a dropdown list, the user is presented with a list that has "** None" as the first selected option.

Request:
I have a list of items in the dropdown: apples, bananas, cloves, dates
I want to be able to select "cloves" as the default that will be displayed to the user.
If they click on the dropdown they will then see the other options.

Why do I want to do this: I have a situation where students indicate their home address, and 99% of students will be from one state. I want to show that as the default, but also allow students from out of state to select their state.
