Another accentuation problem on C5.4

Hi :)

I've read multiple articles about this on the forum but I haven't found any solution to my problem so I've resorted to asking for direct help before going bald from pulling my hair out...

I'm a teacher and also the administrator for the website of the school I teach at. When I built up the site, I used version C5.3.3.1. which I was perfectly happy with. At some point I decided updating might be a good idea, I wasn't ready for 5.5 but at least 5.4.2, right?

Updating went smoothly and all except now, all the accents (yes, forgot to mention I'm French) are in a funk.

_ I looked up Phpmyadmin, I've got utf8-general-ci, I changed it to utf8-unicode-ci just to see if it made a difference, nada.
_ I tried simply renaming the site from Collège Maubuisson to College Maubuisson through the sitewide setting and the scrapbook, it didn't change a single thing. The global scrapbook modifications don't even show.
_ when I clear the cache, it all goes back to normal but if you visit another page and come back, it's all weird again.

I've tried looking at every php file through filezilla, but I haven't found any clue as to where it might come from.

I'm not a computer expert, I just learnt a few things looking around, but I think I've reached my limit, I'm completely stuck. Help would be more than welcome please (╥_╥)

You did clear the cashe and refresh browser every time?

I upload a fresh version of C5.4 on easyphp and tried changing the name of the site via the scrapbook again, it worked this time. So I went back to the real site and tried reproducing what I'd done. I realized the parameters of the full page caching were different, I selected "enabled in all cases", updated the cache and cleared it. After that I was finally able to change the site name, but I haven't exactly solved my problem. If you look at the bottom of the page the site name still appears funky, same in the nav blocks, accented letters are all weird.

I noticed that everytime I put the page in edit mode, get into, say, the nav block, update without even changing anything, then sign out and check the site, it looks fine. But if you refresh the page, there it goes again.

Another thing, I sort of kept the "about" and "search" pages which I only renamed "contact" & "rechercher". For whatever reason, there's absolutely no accent problem in these specific pages. This should prove it's not a utf8 problem, shouldn't it?

NB: and of course as a way to make me lie, I go back to edit the font color in the nav bar and now the about & search page start behaving as the others do... AAAAAAAAAAAAAAAAAAAAAAaRGH!! All in all I suppose this is a good thing, means the pb is general *sigh*
