Is there a way to allow different display formats for the Text - specifically to show "Day, Hour, Minutes" in addition to the Month Weeks Days...

You can do that by manually editing the 'view.php' file, under the 'bb_easy_countdown\blocks\bb_easy_countdown' folder, in the concrete5's packages folder.
