I was thinking that if we could add attributes to it we could add the date and time and a text field. Having them all grouped in one place when local pickup is selected would make it more clear to the customer.

I can see how this feature might be quite useful and I'm usually happy to add new features to my add-ons. In this case, though, adding this feature would quite involved. The major stumbling block to adding it is in the way the eCommerce add-on is currently implemented. The interface it provides for shipping add-ons like Local Pickup does not permit shipping methods to collect additional information (including informational that can be made part of the order).

While it is technically possible to implement this feature with either modifications to the core eCommerce add-on or by "hacking" the shipping method checkout page, it would be difficult to do and (depending on the solution) would require caveats that may not work for some sites.
