Product attributes are shown in all those places, I believe? They are labeled as "options" though, in the order history. In the receipt + confirmation emails, they should appear right after the product on the same line, like so: Product #1: Molly Mallard (All Male)/1 @ $2.95
(Where all male is the attribute).

I see the options, but nothing there, it's blank

Edit: it looks like you are talking about customer choices rather than product attribute, I add a customer choice and it shows under the option

I would like the product attribute not to be seen until purchase

I would check out the product properties single page to see how it's populating the preexistent values of the product's attributes, if they exist. That's probably what you'll want to use elsewhere to get those values.
