Custom email address in mailings

What format is this looking for with custom email addresses? Trying to figure out how to send a notification when a form is completed.
If I select "Send To (custom)", no matter what, I get a "Field "Send to" isn't selected or is invalid" error.

Hi,
I'm just back from a long holiday so thats why I didn't / couldn't respond.
Send to (custom) is for a custom name and emailaddress. So you'll need to add this in the fields next to it. When you have an emailaddress or recipient selector field in your form you can select this as send to.
There is some explanation about this in the documentation.
