Is it possible to send the form contents only to email instead of PayPal?

Sorry I am just trying this out. I have a few questions:
I think payment gateway is only activated if I select Sellable Item in the form. Otherwise it sends the contents to email only. Is that how it works?
Is it also possible to send the form contents (including Sellable Item fields) only to email and not to PayPal? My client may not want to have PayPal there and would rather process the CC payments themselves.
