Now that 5.7 has come out I realize I can't benefit from my purchase of Supermint in the new system and must repurchase the theme. Is there any options for upgrading from the old system at a discounted price?

Unfortunately, rebuild Supermint for 5.7 take me 4 month of work, it's like a complete new theme. I can grant you a licence for easy gallery (https://www.concrete5.org/marketplace/addons/easy-image-gallery) if you would like to use it.
